Reese Cups are one of my favorite candy bars and I love the combination of chocolate and peanut butter so I had high expectations for this cake. It did not disappoint, this is the best devil's food cake I have ever eaten! The cake is rich and super moist and baked up beautifully. The peanut butter frosting was delicious too. I had originally planned on chopping up mini Reese Cups and adding them to the sides of the cake but decided to keep the cake simple but I think that little addition would take this already decadent cake completely over the top.
I did make a couple of changes to this recipe. The recipe calls for 1 1/3 cups of coffee. Since we don't drink coffee and don't like the flavor, I had planned on omitting it. I had a change of heart at the last minute and decided to include it, only to find I didn't have any coffee. So I subbed hot water instead to keep the recipe proportions intact. I also added a splash of vanilla. For the frosting, I followed the modification presented by Karin on SMS and significantly reduced the amount of butter and increased the peanut butter. The frosting tastes great, but I wish I had used less confectioner's sugar as I found the frosting to be a bit stiff and difficult to spread. I do love the homey appearance though.

ReplyDeleteI'm not a big fan of coffee either! But I try to keep some instant espresso powder on hand for recipes like this. Your cake looks beautiful!
