This recipe for Spiced Pumpkin Cookie Cakes has been my favorite Sweet Melissa Sundays recipe so far! I love pumpkin and these cakey cookies are delicious. They are very similar to one of my favorite fall sweets, a pumpkin roll (or if you are feeling fancy, a pumpkin roulade). The sticky rich sweetness of the molasses balanced with the spiciness from the cinnamon and the nutmeg make the cookie halves delicious on their own, but the orange scented cream cheese layer takes them to another level.
In the intro to the recipe Melissa says, "You have to be very careful with these cookies. You can't give them to just anyone. If you make them for someone you are sweet on, he or she will fall instantly in love." If you are in the market for some fall romance, give these a try!
