Pecan Pie Cookies

The Cookie Carnival cookie for November was selected by a vote of our group members (how very democratic of us!) The top vote getter, and my choice, was this recipe for Pecan Pie Cookies.

Super easy and delicious, this is definitely one to try. Best of all, the end result tastes exactly like Pecan Pie. Bite size pecan pie -does it get any better ?!? These cookies were a big hit at work and here at home. The only downside? They are ADDICTIVE.

The shortbread base comes together quickly as does the pecan pie topping. The only change I will make next time, and there will be a next time, is to add a dash of salt. Requiring only a handful of basic ingredients, these cookies will be a great addition to your Thanksgiving table and your cookie tins this holiday season.

Pecan Pie Cookies

Cookie Ingredients
1 cup brown sugar, firmly packed
3/4 cup (1 1/2 sticks) butter, softened
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
dash of salt (candygirl addition)

Filling Ingredients
1 cup chopped pecans
1/2 cup brown sugar, firmly packed
1/4 cup whipping cream
1 teaspoon vanilla

Preheat oven to 350 degrees. Combine all cookie ingredients except flour, baking powder, and salt in a large bowl. Beat at medium speed with mixer until creamy. Reduce speed to low, add flour, baking powder, and salt. Beat just until well mixed.

Shape dough into 1 1/4 inch balls. Place 2 inches apart on ungreased cookie sheets. Make indention in each cookie with thumb; rotate thumb to hollow out cookie slightly.

Combine all filling ingredients in small bowl. Fill each cookie with 1 rounded teaspoon filling. Bake for 8 to 12 minutes or until lightly browned. Cool 1 minute and then remove from cookie sheets.
