Pumpkin Seed Dried Cranberry Trail Mix
This trail mix made from pumpkin seeds, almonds, sunflower seeds, and dried cranberries is completely ADDICTIVE! Clare Robinson warned that it was this past weekend when she made this on her show 5 Ingredient Fix and she wasn't kidding.
Healthy and delicious, an unbeatable combination, you can throw this together in a few minutes and have a big bag full of goodness to snack on. The secret weapon, and what makes this so yummy, is a generous drizzle of maple syrup that adds just a touch of sweetness without overpowering the seeds and nuts. Hitting all of the popular snack cravings; sweet, salty, and crunchy, this trail mix is a winner!
Pumpkin Seed Dried Cranberry Trail Mix
Clare Robinson, 5 Ingredient Fix
2 cups raw pumpkin seeds (pepitas)
1 cup slivered almonds
3/4 cup raw sunflower seeds
6 tablespoons pure Grade B maple syrup
Coarse salt
1 cup dried cherries or cranberries
Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
In a large bowl, toss the pumpkin seeds, almonds, and sunflower seeds and the syrup until evenly coated. Spread the nuts and seeds out, in an even single layer, on the lined baking sheets and season with salt to taste. Bake the nuts, stirring several times with spatula or wooden spoon, until just golden, about 20 minutes.
Cool the nuts completely on the pan, then add the cranberries or cherries and toss to combine. Store cooled trail mix in an airtight container at room temperature.
