SMS is back! Jeanette at The Whimsical Cupcake selected Chocolate Creme Caramels. I had originally planned on sitting out this week because I'm not a big fan of caramels, but in the spirit of trying new things, I decided to make the honey cream version in the book since I've never made caramels before. I've been wanting to try fleur de sel caramels for a while and decided this would be the perfect opportunity.
I halved the recipe and still ended up with a full 8 X 8 pan full of candy. The process was easy, but it took forever for the caramel to reach a temperature of 242 degrees. If I were to make these again I would test cooking them to a little lower temperature to see if it would result in a softer caramel. As is, these really are delicious! The smell of honey cooking and watching the mixture achieve the perfect caramel color are the little things that make cooking so enjoyable. My friend Amy noted that these candies taste like the old fashioned candy Bit O' Honey and they really do. I particularly enjoyed the ones with salt. The softness of the salt blended beautifully with the sweetness of the honey.

ReplyDeleteI think that if you do decide to make them again and choose book them to a lower temp, it'll probably turn out softer since the sugar content is lower but it may not set up!
ReplyDeleteGlad you decided to join in! Your caramels look perfect! My caramel took forever to get up to temperature too but now that I know that at least it wouldn't stress me out next time. I want to try the honey version eventually too, and definitely like the idea of adding a little salt.

Funny, I was going to make the honey version too, but then feared that the caramels would be too sweet and figured that the addition of unsweetened choc would cut down on that, so I went with that instead. I looked and looked in my pantry for some Fleur de Sel I had bought a while back but couldn't find it :o( I'm glad you tried it and liked it.

ReplyDeleteYour caramels look terrific! The honey version sounds divine, especially with a little Fler de Sel - I couldn't resist salting some of mine, too. And seriously, I felt like I was watching the caramel form forever!

ReplyDeleteBit O Honey's are my favorite candy! I thought the chocolate caramels were sensational, so now I'll have to try the honey version and see how they measure up! I sprinkles pink sea salt on mine, and it really made the flavor pop! Happy New Year!
