One of my favorite things to eat is a pumpkin muffin studded with pecans and dusted with powdered sugar. So I was pleasantly surprised when I tasted this week's Sweet Melissa Sunday treat, Sweet Potato Bread with Orange Glaze! If I hadn't made it myself, I would have never believed that bread was made with sweet potatoes instead of pumpkin.
Slighty spicy, moist, and hearty, this bread (posing as a bundt cake) would be great for breakfast or that little something sweet we crave after dinner in our house. The only change I made to the cake recipe was to add a bit of cardamom. The glaze called for in the recipe consisted of fresh orange juice, sugar, rum simmered with a couple of cinnamon sticks. I didn't have the rum or the cinnamon sticks and just made a syrupy glaze from extra orange juice and sugar. It added just a little extra sweetness and moistness to an already moist bread.
My bundt bread came out of the pan perfectly, but I am running behind today and didn't have the time nor energy to stage a better picture! Thanks to Lorelei of Mermaid Sweets for this fantastic pick. You can find the recipe at her blog, here!
