Michelle of Flourchild picked Sweet Plum Clafoutis for this week's Sweet Melissa Sundays recipe. Never having eaten clafoutis before, I was a little confused as to why something I had also assumed was a dessert was in the breakfast section of the cookbook. After having tasted it (as a dessert), I got it. Clafoutis reminded me a little bit of french toast or a baked pancake.
I'm not crazy about plums so I used fresh peaches and they were a perfect fit. This is an easy recipe that will make your house smell divine. The recipe suggests baking this in a cast iron skillet which I love to do! The batter puffs up while in the oven creating a brief, but dramatic, presentation. The clafoutis is deliciously light and rich with the almond extract really coming to the forefront. My only complaint is that you do have to eat this right away. I made it late the other evening and was hoping it would still be good the next morning. Pulling back the foil, I was greeted with a soggy, slightly gray mess. Still a great recipe to use for breakfast or dessert!

ReplyDeleteBeautiful in the cast iron pan! I love my cast iron pan. I didn't want to make the whole recipe and don't have mini cast iron pans, so I used ramekins instead.
