I was intrigued by this recipe. And a little uneasy. These two orange foods aren't usually paired. Intrigue was definitely the victor here, because these little babies were amazing.
If you are new to baking or just want to work on improving your baking skills, muffins are the best recipes to start with because they don't require any special tools or fussy techniques. Just dump the ingredients in a bowl, stir, and bake. Doesn't get any easier.
These muffins are not sweet but not super savory either. The pumpkin adds moistness and subtle flavor. Not too pumpkin-y. A smidgen of cayenne pepper adds a little background heat that balances out the flavors. The recipe calls for ground black pepper, and I had the pepper grinder in my hand, but just couldn't do it. I was afraid the black pepper would be too harsh. I think I made the right call because they were delicious.
Everyone that grabbed one was unsure saying 'pumpkin cheddar??' but ended up loving them.

ReplyDeleteI love the way your muffins have so much cheese on top -- yum! I personally love black pepper, so I was a big fan of the pepper in this recipe -- but the flavor was a little aggressive, so it might not be for everyone!
