FFWD - Broth-Braised Potatoes
These potatoes may look boring but they are anything but. Broth-Braised Potatoes are one of my favorite recipes to date from Around My French Table to date.
I've actually enjoyed recipes for side dishes from Dorie most of all. Maybe because side dishes often feel like an after thought and don't receive the attention they deserve. Sometimes it's hard to get the creative juices following with only broccoli as an inspiration. But Garlic Crumb-Coated Broccoli proves that it can be gussied up with little effort. Spiced Butter Glazed Carrots are crave worthy and have graced my dinner table numerous times. And now these Broth-Braised Potatoes.
Why didn't I think of this? Simply cooking small potatoes in an aromatic chicken broth full of herbs, garlic, and my favorite part, a strip of lemon peel, results in potatoes that are so full of flavor you will be hitting yourself on the head for not coming up with this one your own. (If you are already cooking your potatoes in this manner, I bow to you and your genius.)
More technique, than recipe, these lovely little potatoes will be a regular around my dinner table.

I SO agree! Side dishes are always the hardest to come up with when putting together a menu. I feel like too many cookbooks don't pay enough attention to the side dishes and end up giving the same recycled recipes that one can find in every other book. It is one of the reasons why I love Dorie'S book so much because she has entire sections dedicated to nibbles and salads and soups and and and...
ReplyDeleteI think the nibbles and small plates section is my favorite of the book. Glad you enjoyed these potatoes! I have to admit I wasn't too crazy about them.
ReplyDeleteI'm really enjoying the side dishes too and I thought these potatoes were fantastic! I used chicken bouillon for my broth and it was simple and tasty! Glad you enjoyed them too.

ReplyDeleteI think the potato gratin was my favorite :-) But heavy cream and gruyere are probably not everyday foods. This was a lighter way to flavor up those spuds :-)
ReplyDeleteI also enjoy the simple side dishes for everyday meals, not loaded with fat! Sometimes we really get in a rut with our everyday cooking and need a little nudge to try something new!

I agree that the sides have been so very good and I am the same way - I find it hard to come up with creative sides on my own. Glad you also enjoyed this one.
ReplyDeleteI'm glad you enjoyed! It's not that I didn't care for them myself, but my potatoes just didn't absorb the flavour much... the house smelled incredible though :)
ReplyDeleteNow that you say it, I agree about Dorie's simple sides. I've made the cardamom rice and the green beans with pancetta over and over. These will probably go in that list.
ReplyDeleteI think that is one of the things I've loved the most also. Sometimes it is so hectic during the work week the side dishes get overlooked. I loved the carrots too!
ReplyDeleteI liked these too. One thing I've found with Dorie's recipes is that the flavors are often subtle, so it's not the bi wow", but the great flavor of the ingredients shining through. Happy that you liked these so much. (oh, and I'm with Christy - love the carrots).

ReplyDeleteI'm happy to hear you like the potatoes. Of the three sidedishes you named, my favourite is definitely the carrots. I can eat bowl after bowl of that all day!

ReplyDeleteYou're right. Dorie's side dishes are a wonderful thing about her book. Remember those beets? Heaven. Actually I haven't made the two veggie sides you wrote about so will try them this month. Thatks for the additional ideas!
